What We Crave on a Rainy Day



    Even though I love to travel and explore, I am really a homebody inside. I like to be home, gather my friends around me, and cook for them in the warmth of my kitchen. It is especially true these days as my parents are with us once again for a few weeks. It is crowded, noisy with children craving their attention, but most of all, joyous.

    My parents really are the best house guests ever - my kids' faces say it all.



    "Did you already make a list?" my mom asked over the phone as she was getting ready to board the plane. She knows I always have a grocery list - of course I do! I am always cooking and shopping for food. "I am craving soups" I told her a few hours later. She had just deplaned and I was already sharing my cravings for food. She agreed. I knew then we would be lots of soups.

    We loaded up on celery root, fennel, sweet potatoes, different varieties of winter squash, legumes (we are making my favorite garbanzo and cabbage soup this week), apples, pears, and all things autumn on our first visit to the market.



    The rainy weather for the past few days has been the perfect excuse to stay home and cook. Even the kids love to help out in the kitchen as Miren's new favorite activity is to whisk eggs for me. We let her sit on the kitchen counter while she beats the eggs for waffles and muffins, and Jon carefully stirs the soup. My mom guides them through the process. They seem to listen to her more than they listen to me. It makes me smile.



    We cooked a celery root, fennel, and sweet potato soup that we served with almond and parsley pesto. It is one of my new favorites. I can never get enough of celery root.

    Also caramelized onion, fennel, and purple potato tarts in a buckwheat crust. So delicious. This buckwheat crust recipe is from the book so I cannot share it with you just yet, but do make these tarts with whatever other crust you like. I beg you -- make them. You will thank me. So easy and so good.

    For dessert, chocolate and pistachio cakes. We also made fig and red currant custard with hazelnuts. This one is sweet and really silky. Both are adaptations of recipes from the book. Believe me, I am recipe testing every chance I get.



    My mom and I will continue with our obsession to cook. We cannot help ourselves. Are you the same way?

    Oh and yes... I am still waiting for autumn to arrive. Sooner than later, please.

    Celery Root, Fennel, and Sweet Potato Soup with Almond Parsley Pesto

    Almond and Parsley Pesto


    1 clove garlic
    1/4 cup blanched almonds
    1 cup fresh parsley leaves
    3 Tbs grated Idiazabal cheese
    1/2 tsp salt
    1/4 cup olive oil


    In the food processor, finely chop the garlic and almonds. Add the parsley and chop until it turns into a chunky paste. Add the Idiazabal and salt and process until combined. Drizzle in the olive oil while processing until it turns into a thick paste. Reserve.

    Celery Root, Fennel and Sweet Potato Soup

    serves 4 to 6

    2 Tbs olive oil
    1/2 medium onion, diced
    2 garlic cloves, minced
    1/2 medium fennel bulb, diced
    2 medium celery roots, peeled and diced
    2 japanese sweet potatoes, peeled and diced
    1 russet potato, peeled and diced
    3 sprigs thyme
    1 quart chicken stock
    salt and pepper


    In a large pot, heat the olive oil over medium heat. Add the onions, garlic, and fennel. Stir and cook for 5 minutes.

    Add the celery root, sweet potato, potato, thyme, and chicken stock. Bring liquid to a boil over medium high heat, reduce heat to medium low, cover the pot, and cook for 15 minutes until vegetables are tender. Puree in a blender. Add water if soup is too chunky. Season with salt and pepper to taste.

    Serve the soup with the almond and parsley pesto.


    Purple Potato and Caramelized Fennel Tarts

    makes six 4-inch tartlets or one 9-inch tart

    1 batch of your favorite savory tart dough (see this or this)
    2 Tbs olive oil
    1 medium onion, thinly sliced
    1 medium fennel bulb, thinly sliced
    3/4 tsp salt, plus more for topping
    1/2 tsp black pepper, plus more for topping
    2 sprigs thyme
    1 lb (450g) small purple potatoes, peeled and thinly sliced (with a mandoline)
    Sprouts or microgreens, for garnish (optional)


    Preheat oven to 400F (200C).

    Roll your tart dough to 1/4 to 1/8" thickness. Fill your tart pans with the dough. Chill the dough while preparing the filling.

    In a large saute pan, heat the olive oil over medium heat. Add the sliced onion and fennel. Season with salt, pepper, and thyme. Cook the vegetables until tender and slightly caramelized, about 8 minutes. Set aside to cool slightly.

    Fill the tarts with the caramelized onion and fennel mixture. Top with the purple potatoes slices overlapping.

    Bake the tarts for 40 minutes or until the potatoes are crispy and the crust is cooked. Sprinkle potatoes with a bit of salt and pepper and serve with some sprouts or microgreens. Serve warm or at room temperature.

Soothing Potato, Celery Root and Sunchoke Cream with Purple Potato Chips



    When I took these photos last week, I had a different story to tell you. A story about autumn and potatoes. But things changed.

    It all started last Friday when J. was complaining about a stomach ache. Then, on Saturday, this stomach ache turned into full blown nasty virus that had all of us bending over with pain. Even poor M. who is not quite one year yet, could not keep anything down. Needless to say it was a rough weekend.



    Saturday, I could barely move, but I was the least affected of the four so I somehow managed to make some soup. Soup was the only thing I could picture myself eating. Not this exact one, as I had made and photographed this a few days earlier, but a second batch.

    Celery root, sunchokes, potatoes, leeks, thyme, coconut milk... Creamy and light soup that takes no time to make to get us going. It seemed to be the only thing that really helped.



    Sunday afternoon, C. and I managed to take alternating naps. I woke up after my two hour siesta revitalized. Nothing some sleep cannot help, no?.

    I woke up to an anxious boy in a ninja costume ready to go trick or treating. "is it time yet?", he asked. I got up, took a shower, got dressed and miraculously felt like a new person.

    We grabbed some of these leftover pistachio, oat and chocolate shortbreads, which I had been testing the week before and headed to our friends' house where it as all happening. Cookies went down great, but kids were looking for their packaged candy fix.

    Oh how I love Halloween.



    Potato, Celery Root and Sunchoke Cream with Purple Potato Chips

    makes enough for 4 servings

    3 Tbs olive oil
    1 clove garlic, minced
    1/2 leek, diced
    1 medium celery root, peeled and diced
    2 sunchokes, peeled and diced
    4 medium potatoes, peeled and diced
    2 springs of fresh thyme
    1 1/2 tsp salt
    1/2 tsp pepper
    1 qt chicken or vegetable stock
    1/4 cup coconut milk
    1 purple potato, thinly sliced
    olive oil to fry


    In a large pot, sauté the garlic and leeks in the olive oil for about 1-2 minutes. Do not want to brown them, just sweat them. Add the diced root vegetables, thyme, salt and pepper and saute for another minute.

    Add the chicken stock (enough to cover) and bring it to a boil. Simmer and cover the pot. Cook the soup for about 20 minutes and then puree it. Add the coconut milk and adjust seasoning.

    In the meantime, slice the purple potato with a mandolin or a super sharp knife (mandolin works best). heat the olive oil and fry the potatoes for about 1 minute until they crisp up. Drain them on paper towels and season with salt and fresh thyme.

Green Heirloom Tomato and Celeriac Soup



    You might be wondering why in the world I am blogging about heirloom tomatoes in the middle of winter. While most of you are covered in snow and wearing layer upon layer of clothing, it is tomato season here in Florida. Yes, and it is beautiful. It is the season of tomatoes, strawberries, zucchini, peppers... all the things that most of you enjoy during the summer we have them now.



    On Sundays, we get up early, get a quick bite to eat and we load up the kids in the car to go to our local farmers market. It is what we used to do on Sundays when we were kids and I love having that tradition with my own family now.

    The last couple of weeks, the tomatoes at one of my favorites farm stands have been beautiful and we have been eating them in salads about every single day. I just like to slice them and toss them in a little bit of olive oil, sea salt and maybe a squeeze of lemon juice or a drizzle of balsamic. So sweet and buttery. Yes, buttery tomatoes. Do you know what I mean? Such a soft and creamy texture.



    Everyday, when J. comes home from school, he requests the same thing. Soup and sandwich. He is a boy with habits and his soup and sandwich lunch is one of them. So everyday, I try to come up with new ways to incorporate vegetables in his soup. He does not like raw tomatoes, but he loves his tomato soup. Go figure.

    Last week, I made this green heirloom tomato and celery root soup for him and he loved it. The green tomatoes can be a bit acidic so they are balanced out with the sweetness of the carrot and a pinch of sugar. The celery root along with the potato makes this soup creamy as well. I loved the cherry tomato confit and the fried celeriac on top. All finished with some celery salt. Loved it.



    Green Heirloom Tomato and Celeriac Soup

    2 Tbs olive oil
    1/2 leek, washed and chopped
    1 garlic clove, minced
    1 carrot, peeled and diced
    2 medium green tomatoes, blanched, peeled, seeded and diced
    1 medium celery root, peeled and diced
    1 large russet potato, peeled and diced
    1 Tbs fresh thyme
    Salt and pepper, to taste
    Pinch of sugar
    2 cups chicken stock (just enough to cover the vegetables)

    Garnish
    cherry tomato confit
    celery root fried in olive oil
    celery salt
    fresh thyme


    To blanch the tomatoes, bring water to a boil. Score the end of the tomatoes with a paring knife. Submerge the tomatoes in the boiling water for about 15 seconds. Strain the water and shock them in ice. The skin will peel right off.

    In a medium pot, saute the leek, garlic and carrots in olive oil for a couple of minutes. Add the diced tomato, celery root, potato, salt, pepper, thyme. Saute for a minute and add the chicken stock, enough to cover the vegetables. Cook for about 20 minutes until all vegetables are tender.

    Puree the soup and adjust the salt, pepper and sugar as needed. Depending on the acidity of the tomatoes, the seasoning will vary.

    Garnish with cherry tomato confit, celery root fries, celery salt and fresh thyme leaves.

    Cherry Tomato Confit

    1 pint of cherry tomatoes
    Salt
    Pepper
    fresh thyme
    Olive oil


    Cut the tops off. Score the bottom of the tomato. Blanch them in boiling water for about 10 seconds and immediately shock them in ice. Peel the skin.

    Cut the tomatoes in half and place them cut side up on a baking sheet. Drizzle with olive oil and sprinkle salt, pepper and fresh thyme on top.

    Bake at 225F for about 2-2 1/2 hours until half way dry. Store them in a jar covered with olive oil.
