Winter, Florida Citrus and a Friend's Tree



    As we were browsing through the weather channel today, we realized that the rest of the country was covered in snow or temperatures way below zero degrees. In the meantime, we are breaking record heat and walking around in sandals. I don't know if this is a good or bad thing as I spend six months out of the year anticipating the cool and sunny winter weather of South Florida. This year, the nice weather has been eluding us and I wish I could trade spots with some of you who are enjoying hot chocolate in front of a cozy fireplace.

    On the other hand, we get this. Beautiful citrus fruit. I cannot complain, that's for sure. My friend N. down the street has a large lime tree in her front yard that produces more fruit than she can keep up with and she was kind enough to share some with us.

    Candied kumquats, lime sorbet, clementine financiers, fruit salads... they are all in the works in our kitchen... and it smells like citrus heaven.

Churros with Spiced Chocolate Bisque to Satisfy a Late Pregnancy Craving



    I believe a few weeks ago, I told you that I don't usually like fried desserts or that I have not had much of a chocolate craving as of late. Well, I must take all of that back as this week I fried up the largest batch of churros and cooked the richest chocolate bisque I have made in a long time. We were able to open all windows this week and let the cool autumn breeze come in. Most of you are probably bundled up in scarves and coats by now, but we have had an unusually warm month (even for Florida), so this was a great feeling.



    As I approach the last couple of weeks of this pregnancy, all I want is to be comforted and have all the ones I love close. C. returned from his trip to Montana and now we are getting ready for my parents to arrive.

    One night while C. was giving me a much needed foot rub, we were talking about memories and my family back home. Suddenly the thought of chocolate con churros hit me. Cinnamon sugar churros dipped in a thick chocolate custard. "I must make them tomorrow", I said and so I did.



    The traditional hot chocolate served in Spain doesn't contain eggs. It is a thick chocolate cream usually thickened with a bit of cornstarch or made with a special kind of chocolate that contains thickeners. This recipe is a bit like a creme anglaise flavored with dark chocolate, coffee, orange, fresh ginger, cinnamon and vanilla bean. It can be served warm or even cold, but I really like the churros dipped in a warm custard.

    Churros

    125 ml water
    125ml whole milk
    110 grams butter
    pinch salt
    large pinch sugar
    150 grams flour
    3 eggs

    Canola oil for frying

    Cinnamon sugar for coating


    Place the water, milk, butter, sugar and salt in a medium saucepan. Bring this to a boil. Add the flour all at once and stir with a wooden spoon until it comes together into a smooth ball.

    Transfer this mass to the bowl of an electric mixer (or can do it by hand) and start mixing with a paddle attachment. When most of the steam has evaporated, add the eggs one at a time. Mix until it comes together to a smooth thick mass.

    Transfer to a pastry bag fitted with a star tip (#5).

    In a wide pan that has tall sides, pour about 3" deep of canola oil. Heat it to 350F. When it reaches the temperature, pipe the batter into the oil and cut with scissors. Fry them until golden brown. Remove the churros from the oil and roll them in cinnamon sugar. Serve immediately.

    Spiced Chocolate Bisque

    500 ml heavy cream
    200 ml whole milk
    100 grams sugar
    1 vanilla bean, split
    1 star anise
    1 stick of cinnamon
    Zest of 1 orange
    3 slices of fresh ginger
    5 grams cocoa powder
    3 grams instant coffee powder
    6 egg yolks
    135 grams dark chocolate, chopped


    In a medium saucepan, heat the cream, milk, sugar, vanilla bean, star anise, cinnamon, orange zest and fresh ginger. Bring it to a boil. Turn the heat off and let it steep for about 10 minutes. Return the mixture to a boil and add the cocoa powder and instant coffee powder. Whisk well.

    Place the egg yolks in a large bowl and temper the milk mixture into them while whisking. Return this mixture to the sauce pan and cook for a couple of minutes while constantly stirring until lightly thickens.

    Place the finely chopped chocolate in a large bowl. Place a fine sieve over the bowl and pour the custard over the chocolate. Mix until all the chocolate is melted and you have a smooth cream.

    Can be served warm, room temperature or cold. Store in the refrigerator for up to 2 days. It will thicken when it cools.

Orange and Brown Butter Madeleines, Spring Get Together and Friends



    C. and I have always liked to entertain and cook for our friends. After all, I come from the land where everything is discussed, solved and celebrated around a table of good food. But ever since we became parents, it has not been so easy to keep that up. Our nights end at 8pm, dinner can be a messy fare and time for long chats is limited to five minutes. But this weekend, we managed to plan a get together with close friends, which was much needed. Not too many, only ten, which given the circumstances is a perfect number.

    For dessert, I had planned a "build your own" sundae bar with homemade chocolate chip cookie crumbs, candy bars, fruit toppings. I also made these orange and brown butter madeleines to finish the meal with coffee and tea, but unfortunately, no one ever made it to dessert.




    I came up with this recipe years ago while I was working at my first fine dining restaurant and still attending culinary school. My chef at the time held that ship tightly and never gave any of us any freedom to try anything new (and of course, I don't blame her). But one day, she let me play around and turned a regular madeleine recipe into this one with the addition of lots of orange zest, almond flour and brown butter. Needless to say, I was very excited and everyone seemed to enjoy them.

    A few days later, I was taking a petits fours class with a well known pastry chef and the subject of madeleines came up. He said to the class, "as far as I'm concerned, almond flour and brown butter only belong in financiers and you will never see that in any of my recipes". You can imagine the embarrassment. I deflated then and there. Some chefs really had the ability to do that to me.



    Orange and Brown Butter Madeleines

    6 eggs
    250 grams sugar
    Zest of 1 orange
    2 tsp vanila extract
    225 grams cake flour, sifted
    110 grams almond flour
    1 tsp baking powder
    1 tsp salt
    250 grams butter, browned and cooled


    Start by making the brown butter. Place the butter in small saucepan and heat until it starts to bubble and sizzle. Watch it closely as it will start to brown soon after the sizzle diminishes slightly. When it smells like roasted nuts and the bottom of the pan is brown, remove the pan from the heat, strain the butter and let it cool.

    Place the eggs, sugar, orange zest and vanilla extract in the bowl of an electric mixer. Whip until light and thick, about 5 minutes. Add the flour, almond flour, salt and baking powder. Mix until all the dry ingredients have been incorporated. Slowly add the brown butter as the machine is running. Let butter incorporate into the batter and continue adding it.

    Remove bowl from mixer and fold with a spatula to make sure all ingredients are well mixed. Let it rest in the refrigerator for 4 hours.

    Pipe batter into madeleine molds. Bake at 425 for 8-10 minutes (when "bumps have appeared), reduce oven to 375F and continue baking for 5 more or until browned.

    Post Script- I just want to clarify that this chef never had mean intentions. He didn't even know that I had made these madeleines. He was simply voicing his opinion. He happens to be a super sweet chef who is always ready to share. I just had to clarify that. Thank you!

How to Explain Cranberries



    This will be the first year since I have been living in the US that my parents will get to spend Thanksgiving with us. It's very exciting to be able to share a holiday meal with them. I grew up in a large family where holidays and gatherings revolved around food. We always had at least thirty people around the table. Space was always an issue but it never stopped us. Improvised tables, mismatched silverware, borrowed chairs. It was all fine as long as we could all be together, elbow to elbow. So this year, I am really going to sit at the Thanksgiving table, take time to enjoy the moment and be thankful for their company.

    As my mom and I sat down to write down the Thanksgiving dinner menu, I realized how most of the traditional American holiday dishes are foreign to my parents' palates. Roasted turkey, stuffing, yams with marshmallows or cranberries. They have never tasted any of those. I have to admit I am not very fond of the cranberry jellies and compotes served at many dinner tables, but I really wanted my mom to try a new berry, something she had never had before.



    Warm fruit crisps are always a comforting dessert and my mom happens to love cooked apples in any way, shape or form. So I combined sweet apples with tart cranberries and spicy candied ginger and topped it all with pistachio and almond crumble. And because us Europeans really enjoy fruit compotes in jars (check out these lovely ladies here and here), I made her a little cranberry and orange compote to go with a quick white chocolate mousse. I am not much of a white chocolate fan unless it is accompanied by something tart and sour to balance out the sweetness so I barely added any sugar to the cranberry compote.

    Cranberry, Apple and Candied Ginger Crumble

    100 grams fresh cranberries
    2 golden delicious apples, peeled, cored and medium diced
    100 grams sugar
    5 grams candied ginger, small dice
    Zest of an orange
    Juice of half an orange
    Pistachio and almond crumble (use half ground pistachios and half ground almonds)


    In a bowl, combine the fresh cranberries, diced apples, diced ginger, sugar, orange zest and orange juice. Mix gently and let the fruit sit in the bowl for a few minutes until the sugar starts to lightly dissolve with the juices.

    Place 4 small ramekins on a sheetpan. Spoon the fruit filling into the ramekins and top with some pistachio and almond crumble. Bake at 350F for about 30 minutes or until the fruit starts to bubble over and the crumble is golden brown. If the topping starts to get dark but the fruit is not cooked yet, cover the ramekins with aluminum foil so it doesn't burn and continue cooking.

    Cranberry Orange Compote

    100 grams fresh cranberries
    20 grams sugar
    Zest of half an orange


    Combine the cranberries, sugar and orange zest in a small saucepan and cook for about 10 minutes until cranberries pop open. You can serve it like this or puree it with a hand blended or food processor (which I did). Spoon the compote into the glass jars and let it cool.

    Quick White Chocolate Mousse

    150 grams heavy cream, soft peak
    75 grams white chocolate, chopped


    Place the white chocolate in a bowl and melt it over a double boiler. Remove the bowl from the heat when the chocolate is melted and let it cool slightly.

    In the meantime, whip the cream to soft peak. Pour a third of the whipped cream into the chocolate and whisk. Pour this mixture over the rest of the whipped cream and gently fold not to overmix it.

    Place the mousse in a pastry bag and pipe into the glass jars on top of the cooled cranberry compote. Return jars to refrigerator to cool completely and until the mousse hardens a bit more. Serve with white chocolate shavings.
