How To Stay Cool



    Summer approaches and the heat is already getting to me.

    This is the time when all I can think about is fresh fruit, chilled soups, salads, and lots and lots of sorbet pops.



    I bought the first saturn peaches of the season a few days ago. They are nature's candy, if you ask me. (I seem to say that about all fruit, don't I?). Soft, full of water, and sweet. We have been enjoying them sliced for breakfast every morning.

    "Let's make an orange and peach smoothie" Jon asked. It hit the spot after we came back from a swim.




    It has been so hot that I barely turn on the oven at home. We grilled outside and I made a few salads with ingredients from the farm.

    The kids and I went to pick tomatoes at the farm early in the morning. I guided them on which ones to pick and they quickly got the hang of it. Even as early as nine in the morning, it was unbearable to stand out in the sun, and we left quickly, just after saying hello to the baby goats and chickens.



    Back at home, we turned the tomatoes into a mid morning snack. Drizzle of olive oil, squeeze of lemon juice, and a touch of pink salt.

    For lunch, a refreshing red lentil, salmon, radish, and fennel salad inspired by a recipe I had seen at Elle à Table.

    "No dessert?" C. asked. "It's too hot to bake" I replied.

    All I got was a look.



    So I pulled out some mulberries from the freezer and made a quick batch of mulberry, millet and poppy seed cakes. And to take advantage that the oven was on, I ended up baking a galette with leftover tart dough from a recipe for the book, saturn peaches,and raspberries.



    And summer is almost here.

    Mulberry, Millet and Poppy Seed Cakes

    Makes 18 cakes

    1/2 cup superfine brown rice flour
    1/2 cup millet flour
    1/3 cup almond flour
    1/4 cup potato starch
    2 Tbs tapioca starch
    1 Tbs poppy seeds
    1 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    2 eggs, room temperature
    1/2 cup natural cane sugar
    1/3 cup applesauce
    1/3 cup coconut milk
    1 Tbs lemon juice
    1/3 cup melted ghee
    1/2 cup mulberries (mine were frozen)


    Pre-heat oven to 350F.

    In a large bowl, whisk together the first nine ingredients. In a separate bowl, whisk together the rest of wet ingredients. Add the wet ingredients to the dry and mix until incorporated. Fold in the mulberries.

    Pour the batter into muffin molds lined with baking papers. bake for 18 to 20 minutes until a skewer inserted in the center comes out dry.

    Cool in the pan for 5 minutes and then transfer to a cooling rack. Store them in an airtight container for up to 2 days.

    Red Lentil, Salmon and Fennel Salad

    Serves 4

    1 cup red lentils, rinsed several times
    8 ounces sockeye salmon
    5 Tbs olive oil
    1 medium fennel bulb, thinly sliced
    6 radishes, thinly sliced
    Arugula
    Watercress
    1 Tbs lemon juice
    1 tsp dijon mustard
    Salt and pepper


    Place the lentils in a medium saucepan and cover them with cold water plus 1 inch. Bring the liquid to a boil, reduce heat to medium low, cover the pot, and cook the lentils for 8 minutes until they are al dente. Drain them and rinse them in cold water. Reserve.

    In a medium saute pan, heat 1 Tbs of live oil over medium heat. Season the salmon with salt and pepper. Place the salmon skin side down. Cook for 3 minutes. Turn it over and cook it for 1 to 2 minutes longer depending on the thickness. Turn onto a clean plate and let it cool. When cool enough to handle, flake it with a fork and reserve.

    In a large bowl, toss together the red lentils, salmon, fennel, radishes and greens. Make a quick vinaigrette with the dijon, lemon juice and 1/4 cup olive oil. Drizzle the vinaigrette over the salad. Season with salt and pepper. Toss well and serve in glass jars.

Mulberry and Rhubarb Crumb Cake



    "Can I come and get some eggs?" I asked Robert early one morning. "Sure. I will have something for you when you get here" he replied.

    I drive to their farm at least once a week these days. So many new recipes to test that I never seem to have enough eggs. It is also a great excuse to say hi to the goats and the chickens, as well as watching how the garden is growing.

    "It is getting too hot" he explained. The brussels sprouts didn't make it, nor did the tiny wild strawberries.



    But as I was getting ready to leave, he reached in the cooler and brought out this basket full of ripe mulberries. Deep purple, soft, sweet and as large as I have ever seen them.

    A "whoa" escaped me. I was so excited. Hand picked the day before.

    When I came home, I pulled out some frozen rhubarb and made a quick crumb cake before Jon got home from school. A sweet afternoon treat.

    I wish I had someone to photograph my hands right after. Purple as can be.

    Mulberry and Rhubarb Crumb Cakes

    adapted from Martha Stewart Living

    Makes a 9"x9" tart pan

    6 Tbs unsalted butter, melted
    1/2 cup light brown sugar
    1/4 tsp salt
    2/3 cup superfine brown rice flour
    1/4 cup quinoa flour
    2 Tbs almond flour
    2 Tbs potato starch


    1/2 cup unsalted butter, room tempertaure
    1 cup powdered sugar
    1 tsp vanilla extract
    1 tsp lemon zest
    2 eggs, room temperature
    1/3 cup superfine brown rice flour
    1/3 cup quinoa flour
    2 Tbs almond flour
    1/2 tsp baking powder
    1/4 tsp salt

    1 1/2 cups ripe mulberries
    1 cup diced rhubarb

    Mix the first seven ingredients in a bowl until it forms a crumble. Chill it for 20 minutes.

    Pre-heat oven to 350F. In the bowl of a stand mixer, cream the butter and powdered sugar together. Add the vanilla extract and lemon zest. Scrape the sides of the bowl. Add the eggs one at a time. Mix and scrape the bowl well. Add the dry ingredients and mix until the batter comes together.

    Grease a 9"x9" square tart pan. Spread the cake batter evenly. Top the batter with the mulberries and rhubarb. Top the fruit with the chilled crumble (there might be some leftover crumble that you can freeze for another time).

    Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool, then cut it into 2 inch squares.

Wild Mulberry, Cherry and Pistachio Clafoutis... the First of the Season



    I have always loved this time of year. As a kid, the end of May and beginning of June were always an exciting time. The weather unpredictable ("hasta el cuarenta de mayo no te quites el sayo"), but the first signs of summer would start making their first appearance. Morning dew on the grass on our walk to school, the first strawberries and cherries at the market. It was the anticipation of the three months of vacation ahead of us. Time spent outside, at the beach or going hiking.



    Going back to my childhood, I remember the times later in the summer (actually closer to the end of summer), when we used to pick blackberries from a wild bush close to my house. Close to the train tracks surrounded by rusty metal and imminent tetanus shots. We spent hours there with buckets eating and picking berries for jam.



    Last Sunday, we found wild mulberries at the farmers market. Mulberries that grow wild behind one of our farmers' yard. I couldn't believe it. I haven't had a wild mulberry in years. We picked a couple of pints and enjoyed them like candy. Mano a mano.

    The first cherries of the season also appeared this week and of course, I had to go with a classic. A clafoutis with mulberries, cherries and pistachio meal. Also, gluten free and casein free as I used coconut milk and cornstarch.



    We ate the clafoutis on Mother's Day when we had a gigantic BBQ pit for our entire neighborhood. It was one of those almost unbearable hot Florida afternoons. We set out camp outside with big umbrellas, lawn chairs and a hose. BBQ and hose must go hand in hand. The kids played in the water for hours, we nibbled on BBQ all day, drank homemade ginger ale and had clafoutis for dessert. Ah, summer!



    Mulberry, Cherry and Pistachio Clafoutis

    Makes 9" pan (I made an 8" one plus 3 small ramekins)

    2 cups mulberries and pitted cherries
    3 eggs
    1/2 cup sugar
    1/3 cup cornstarch
    pinch of salt
    2 Tbs pistachio meal
    3/4 cup coconut milk (or whole milk)
    1/2 vanilla bean, scraped
    Zest of 1 lemon
    Ghee for brushing the ramekins (or room temperature butter)

    Brush pan with softened ghee or room temperature butter. Heat oven to 350F.

    In a large bowl, whisk together the eggs and sugar. Add the cornstarch and whisk until dissolved. Add salt, pistachio meal, coconut milk, vanilla and lemon zest. Whisk until all incorporated.

    Pour into pan and bake until set and edges are golden brown.
